I can't believe you're making me do this what I'm sick you got to speak up I don't care if you're sick well what if I breathe and cough all over the food while I'm making it that's gross you're gross we are making picnic pork shoulder today I don't know why it's called picnic I normally just buy boneless pork shoulder but this one came with the skin on and bone in and apparently that's the picnic style what I'm looking forward to is the skin that will crisp up in the oven for crackling but I'm going to cook it first in the instant pod as normally it would take five and a half hours in the oven which I believe there would be a fast away so here we go I'm going to score the skin if my knife was sharp enough so dude sharpened a knife for me so that's good this one cut right through you want to cut it through just the fat and not into the pork into the meat can't see you want to score around this string or you want to leave it on yep watch your fingers I'm going to salt liberally try to get the salt in between Oh in between the scores scoring whatever you call it all right I have three carrots that I've already cut up put them in the pot along with two celery sticks and two onions chopped up or not chopped up cut into quarters got four cloves of garlic smash I have 1 cup of vegetable stock put this top and I've got some fresh thyme just leave that on top and we're gonna go wash my hands then put the lid on it on I'll hand to place the sealing knob sitting on upon sealing and I'm setting it on manual for I think I'm going to do you want I wouldn't a 75 minutes and start on high pressure that's it for now see in a little bit don't look so excited well how about if you all would rather see dude up here cooking so that I can rest please comment below good hitting cancel don't smirk at me and I'm going to release the rest of the pressure it has already been natural releasing for 20 minutes so this shouldn't be much left in here look at all of that liquid yummy I've already preheated the oven to 425 and I'm hoping that that's going to be high enough to crisp up the skin we leave it at that time sorry fall off the bones to do that sorry can you pick it up maybe that can be your treat my treat yes no I are waiting for the crackling hopefully there will be crackling if the reason this is a failed recipe maybe see if we can get this out and put it on a rack so hopefully and the fat will crisp up is what did I say 425 we'll leave it in there for half an hour and I'm going to bring it down and see if it will continue to crisp about half an hour at 425 and I'm going to lower the heat now to 375 and keep it in there for another half hour this was not what I was expecting I was expecting it to be more like a crackling so maybe traditional method in cooking this is best which is five to six hours slow-cooked in the oven that would probably allow the fat to render out and for the crackling to farm so lesson learned that's right I'm sure it's still um tender I'm just making some gravy with the liquid that was in the instant want and yeah that's it for now I added a quarter cup of butter and I've melted it on medium heat and I'm adding a boat quarter cup flour making a roux just going to whisk that in and cook it for one minute just a little bit more I cook down the liquid in the instant pot for about 15 minutes and I'm going to add that now strained into the roux nice yummy gravy is it hey where'd it go it's not stuck there you are all right you're right I'm always right you wish some I think it's just gonna be pull apart a fork tender this over here and see better well actually the skin is a little bit like crackling it's not a lot okay and serve it with a little bit of the creepy but uh that was fairly easy you can do it even when you're sick I know you're tada isn't as cheerful as it actually is trying alright if you like this video please click like and subscribe to my channel as well as um check out my new Facebook page and follow me on Instagram thanks for watching show the sick person some love by any chance are you sick shut up yeah you know I am sick but that's fine because you wanted to film so here we are

You could put that skin in the microwave to get your snap crackle pop you want… be sure to cover with paper towels it will splatter…

I'm going to just zap up the veg to make gravy . They say we need more fibre in our lives??? Also going to cut the skin off, and oven blast that separate. Lets see. Time ran away with me today, and the electric pressure cooker was the only way to go. Oooooh oooh and I can't go without saying mean Dude.

Awesome recipe. I got incredible results with a couple slight modifications:
1. Add ground pepper and garlic powder to seasoning AND used chicken stock rather than vegetable stock
2. Placed in the instant pot skin side up
3. Pat dry with paper towel before placing in the oven for better cracklin result
It was awesome!

First of all, Flo should get a long rest and get well soon. "Dude" comments are not necessary and very annoying. Dude is trying to "be funny" but he is very distracting for a teaching video.

@5:00 or so, pat shoulder dry with paper towels, more slits in skin, cover non-fat meat areas with foil and 500 degrees for 20 minutes

Sorry to see you have a bad winter cold, but you did a excellent job on the pig shoulder in the instant pot, and oven. Think the pork came out very nice, great color, almost like pulled pork. Happy Holidays pass the cold along. Love your channel,God Bless

To get the cracklin', just take the skin off when the roast comes out of the instant pot and put it in the oven by itself. You can do this with roasted turkey skin too – really great!
