Omg. I have watched almost every video that was taken in restaurant Bozar. And I kinda have a hope that wanna work for this Chef!
Maybe he can turn fierce during service but in the video i see Mastery skill set with humility.

love the flavors, this has to be a exiting dish to taste.Ratio fat/meat on that lamb puts me off though.Love some fat on a lam filet but this is to much.rest off the dish 10 out off 10.
